Sesame Kale with Kamut Udon Noodles Recipe
High Fiber, High Protein, Vegetarian
Ingredients
- 1 bunch of kale, rinsed and chopped
- 1 8oz package of kamut udon noodles
- 1 - 2 tablespoons sesame seeds, toasted
- 2 tablespoons toasted sesame oil
- 2 tablespoons low sodium tamari
- pepper to taste
Directions
Fill large stock pot with water about ¾ of the way. Bring to a boil
Add in the whole package of udon noodles (can be added either whole or broken down if preferred). Let boil.
While this is boiling, put sesame seeds in small sauce pan and place on stove over medium heat. Lightly toast seeds. Make sure to stir occasionally. This will probably only take 4-5 minutes.
After 5 minutes, add the chopped kale in several bunches. Press down with large slotted spoon to fully immerse the kale.
Let this boil another 5 minutes.
Drain
Add the sesame seeds, toasted sesame oil and low sodium tamari. Toss together and serve. Add some pepper if desired.
This also tastes good with fresh chopped tomatoes or seasoned baked chicken breast pieces. Also really good the next day cold!
