Easy Veggie Fajitas Recipe
High Fiber, High Vitamin C, Dairy-Free (when served without cheese), Budget-Friendly, Vegetarian
Ingredients
- 2 tablespoons olive oil
- 1/2 onion, diced
- 1/2 green bell pepper, diced
- 1/2 red bell pepper, diced
- 1 portabella mushroom
- 1 garlic clove, minced
- 2 teaspoons fajita seasoning (recipe below)
- 1 teaspoon Braggs liquid aminos
- 1 teaspoon hot sauce
- 8 tortillas
Fajita Seasoning Recipe
- 1 tablespoon chili powder
- 1 1/2 teaspoons cumin
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon crushed red pepper flakes (or pinch of cayenne, to taste)
- Directions: Combine and store in airtight container. Can
double or triple recipe to store for later.
Directions
Slice veggies and saute in olive oil with garlic.
Add seasonings about half-way through cooking.
Serve on tortillas.
